Chicory (Cichorium intybus)

HARDY PERENNIAL. Ht 100cm.

This plant produces edible clear blue flowers from mid-summer to mid-autumn. The leaves are similar to lettuce leaves and can be picked and used in mixed salads all year round. The roots can also be eaten like a vegetable and when dried, chopped and roasted, make a good substitute for coffee.
Plant in fertile, well-drained soil in full sun.
